Let's talk about dinner.
Specifically quick and tasty ones.
Like casseroles.
With it being back to school season and us trying to readjust to this schedule, casseroles have been my favorite thing to make.
They're quick, they're easy, they're filling and they're delicious!
I'm going to share with you one of my new favorites casserole recipes.
Mac & Cheese Veggie Chicken Casserole.
Recipe courtesy of Country Crock and adapted to fit our big ole family. (Plus leftovers for mine and Maddie's lunch the next day)
You will need:
- 4 Tbsp. Country Crock Spread
-melted and divided. - Chicken tenders cooked ( I used a whole pack so like 6 or 8)
-Boil, chop up or shred. - Bag of frozen vegetables. (This is all about your families personal preference- we used one with celery, potatoes, carrots and peas).
- 1.5 cups of milk
- 2.5 cups of shredded cheddar cheese
- 16 ounces (a box) of rotini pasta
-cooked and drained. - 1/4 c plain dry bread crumbs.
- 1 Tbsp Parmesan cheese.
Preheat your oven to 400 degrees.
Combine 3 Tablespoons of Country crock spread in a bowl with the chicken, milk, vegetables, cheese and pasta.
Pour into 9x13 casserole dish.
In a separate bowl combine remaining spread, Parmesan and bread crumbs.
Sprinkle on top.
Bake for 30 minutes.
Enjoy.

I let the chicken and noodles cook while helping Fin with homework.
I mixed it all together, threw it in the oven, started a load of dishes and finished up helping Fin with homework while it cooked.
Seriously, casseroles are the best.
So quick. So tasty.
I ate leftovers of this for lunch the next day with a bit of hot sauce mixed in- YUM!
Country Crock Product Info in case you're curious:
- Have 0g trans fat per serving
- Contain no partially hydrogenated oils
- Have no cholesterol
- Are 70% less fat than butter per serving
